The beer is a collaboration between Wildfire and Phase Three Brewery in Lake Zurich, IL. Led by Phil Stubstad, General Manager at Wildfire – Oak Brook, Phil has been with Lettuce for more than 20 years, working his way from intern to server to manager, and now general manager. Along the way, he developed a passion for homebrewing that began in his garage about 15 years ago and eventually evolved into Wildfire Craft Beer Co., which launched in 2013.

Since its founding, Wildfire Craft Beer Co. has brewed 14 distinct styles of beer, with number 15 currently in production. Each limited-release beer typically stays on tap for about two months and is created to complement Wildfire’s signature dishes while highlighting the seasonal ingredients that guests know and love.
Phil’s brewing journey started with a simple homebrew kit and plenty of curiosity. After years of experimenting and perfecting his process, he brought a few samples to share with his colleagues at Wildfire. The positive feedback and encouragement from the team, especially from Vice President Adam Rochman, gave him the confidence to take it further.

With Adam’s support, the idea for Wildfire Craft Beer Co. took shape, built on a mission to create beers that were not just enjoyable on their own but that also paired beautifully with Wildfire’s menu. Partnering with Phase Three Brewery allowed Phil to bring his recipes to life on a larger scale so guests could enjoy them on tap at all Chicagoland Wildfire locations.
When choosing a brewery partner, Phil knew Phase Three Brewery was the perfect fit. Based in Lake Zurich, Phase Three is known for its small-batch creativity, consistency, and craftsmanship. Their team helps bring Wildfire’s beer concepts to life while maintaining the balance, precision, and flavor integrity that Wildfire is known for.
Together, they refine recipes, select ingredients, and perfect their brewing methods to ensure every Wildfire Craft Beer Co. release meets the highest standards. The collaboration also extends to events, such as the Wildfire and Phase Three Beer Dinner Series, where guests enjoy curated multi-course menus paired with exclusive beer selections. Lighter beers such as pilsners, blondes, and wheat styles appear in the warmer months, while darker, malt-forward beers like Scotch ales and stouts are crafted for the cooler seasons.
