Kicking off Monday, June 2, Lettuce Entertain You Restaurants is launching Prime Meats by Lettuce, a delivery-only butcher shop offering a variety of premium steak and chops to the city of Chicago. For more than 50 years, Lettuce chefs have cultivated meaningful relationships and partnerships with the world’s best farmers, ranchers and purveyors to bring the highest quality steaks to our menus. Prime Meats by Lettuce has been curated by chefs from Lettuce’s top steakhouses and will offer guests the chance to purchase more than a dozen cuts of meat, including prime dry-aged cuts, globally sourced wagyu, bone-in chops, filets and more.

Just in time for grilling season, this delivery-only butcher shop will offer guests the opportunity to recreate a steakhouse experience in their own kitchen, using top-quality steaks and chops from their favorite Lettuce restaurants.
Prime Meats by Lettuce cuts include:
Creekstone Filets: From Arkansas City, Kansas, these halal- and USDA-certified Black Angus filets are prized for their superior tenderness, bold marbling and rich, buttery flavor. Available cuts include Hand Cut Filet, Center Cut Filet and Bone-In Filet.
Prime Dry-Aged Cuts: these cuts are known for their unmatched depth of flavor. Options include Signature Prime Steakburgers, 16-oz. New York Strip, 24-oz. Cowboy Steak and 36-oz. Porterhouse
Globally Sourced Wagyu: Luxury beef cuts from Australia’s Westholme Wagyu and Japan’s Kawaguchi Farm and Hokkaido are known for their melt-in-your-mouth goodness. Offerings include Westholme 12-oz. Strip, Westholme 42-oz. Tomahawk, Japanese Sendai and Chateau Uenae Snow Beef
Classic Cuts: Bone-in selections, such as RPM Steak guest favorite the 16 oz. Bernie Miller Chop, are beloved for their enhanced richness, and deep, robust taste. Bone-in options include 12-oz. High Plains Bison Filet, 20-oz. Open Prairie Ribeye, the Beeman Ranch 18-oz. New York Strip and the 16 oz. Beeman Ranch Delmonico Ribeye.
Additional enhancements, including Tallow Butter, Garlic and Rosemary Butter, Black Truffle Butter and RPM Restaurants’ Signature Steak Salt are available to complement every order.
