Lettuce Entertain You’s Mexican Mainstay Now Serving Fresh Flavors and Coastal Vibes on the Las Vegas Strip

El Segundo Sol has unveiled a new look and new menu designed to transport guests to the Mexican coast. After more than 13 years of dishing out authentic Mexican cuisine on the Las Vegas Strip, Lettuce Entertain You Restaurants‘ popular destination at Fashion Show Las Vegas has updated its menu of signature Carne Asada, Fajita Platters and margaritas to include fresh seafood and more, all served in reimagined dining spaces evoking the historic charm of a Mexican hacienda with a touch of Tulum.

The Space
Lettuce Entertain You’s Director of Interior Design Avril Zayas led the complete redesign of El Segundo Sol’s indoor and outdoor drinking and dining areas, drawing inspiration from the relaxed allure of Tulum and timeless charm of old Mexico. Stone walls, wooden beams, rope-wrapped pillars and lush greenery infuse the expansive dining room with a rustic-luxe feel, along with hand-woven light fixtures, rich leather seats, vibrant textiles, and the new focal point of the room, a stone wall displaying bottles from El Segundo Sol’s curated selection of more than 100 tequilas and mezcals. A sleek new marble-top bar is surrounded by high-top tables with wicker bar seating, adding modern coastal vibes, and colorful, decorative pottery and agave plants accent every corner of the space. The new private dining room accommodating up to 18 guests evokes an authentic Mexican hacienda and the outdoor patio–connected to the main dining room via a trellis walkway–offers an inviting al fresco experience to more than 90 guests.

The Menu
El Segundo Sol’s updated menu from Senior Executive Chef Wes Pumphrey remains true to its roots, offering guest favorites like Fresh-Made Guacamole, Fajita Platters and Tacos while introducing exciting new dishes influenced by the coastal regions of Mexico. Highlights include Torre de Mariscos, a seafood tower with shrimp, scallops, octopus, avocado and black salsa and Charred Octopus served with crispy yukon gold potatoes, chimichurri and garlic aioli. The menu also features new comfort dishes like Pollo Al Pastor, one-half chicken al pastor, served with achiote, caramelized pineapple, chimichurri, fresh tortillas, and their signature rice and beans. Along with its extensive tequila menu, El Segundo Sol will continue to offer its signature margaritas frozen or on the rocks, sangria, craft cocktails and a variety of Mexican, domestic and imported beers.
