‘TOKYO LAST CALL: SEASON III’ RETURNS TO THE DOJO AT SUSHI-SAN LINCOLN PARK
In year three, the series will exclusively spotlight bars from Japan bringing their signature cocktails to Chicago throughout October and November
This fall, Sushi-san – Lincoln Park will transform its lower level “Dojo” space into a speakeasy-style bar for Tokyo Last Call: Season III, a one-of-a-kind cocktail pop-up series. Each weekend will spotlight a guest bartender from five of Japan’s most acclaimed cocktail bars, including Asia’s 50 Best Bars’ newcomer Punch Room Tokyo, Cocktail Stand Furek, The Bellwood and Bar Trench, all serving drinks in their inimitable style and offering guests an exclusive look into their celebrated bar programs.
Curated by Beverage Partner Kevin Beary and Bar Manager Scott Kitsmiller (Three Dots and a Dash, The Bamboo Room, Gus’ Sip & Dip, Kitty’s Cosmopolitan Club, and Chicago Cocktail Classic), and presented by House of Suntory’s Brand Ambassador Davey Jones, Tokyo Last Call: Season III will once again transport guests to Japan’s vibrant cocktail scene without leaving Chicago.
“We’re excited to return to the Dojo for season three because, for the first time, Tokyo Last Call will feature an entirely Japan-based lineup, bringing five incredible bars from across the country to Chicago,” said Beary. “Each of these spots reflect the depth and diversity of Japan’s cocktail culture, from Punch Room, recently recognized by Asia’s 50 Best Bars, to Cocktail Stand Furek, making its first U.S. pop-up appearance. It’s a rare opportunity for Chicago guests to experience some of Japan’s most exciting bar talent all in one place.”
Each guest bartender will present four cocktails utilizing spirits from the House of Suntory’s portfolio, such as Roku Gin, Hibiki Japanese Harmony Blended Whisky, Toki Blended Whisky, Toki Black Blended Whisky, and more. The menu available during each weekend will also showcase each bar’s individual style and offerings rooted in the traditional techniques and flavors of Japan’s buzzy cocktail scene. The series schedule is as follows:
- Week 1 (Oct 8–11): Bar Nayuta (Bartender: Hiro Nakayama)
- Week 2 (Oct 15–18): Cocktail Stand Furek (Bartender: Ryuichi Saito)
- Week 3 (Oct 22–25): Bar Trench (Bartender: Rogerio Igarashi Vaz)
- Week 4 (Oct 29–Nov 1): The Bellwood (Bartender: Cole Nunley)
- Week 5 (Nov 5–8): Punch Room Tokyo (Bartender: Yas Kawakubo)
In addition to standard reservations for Tokyo Last Call: Season III, guests can elevate their experience by booking The Master’s Counter, an intimate seat at the guest bartender’s bar top. Priced at $145 per person (gratuity not included), the experience offers a front-row look at the featured bartender’s craft through a guided, interactive progression of three select cocktails and a special Suntory cocktail from the guest bartender, paired with select bites from Sushi-san and deeper insight into the inspiration and techniques behind each drink.
The series will take place at Sushi-san – Lincoln Park’s lower-level Dojo. Tokyo Last Call: Season III will be open Thursday and Sunday from 5:00 PM – 11:00 PM and Friday and Saturday from 5:00 PM – 12:00 AM throughout the series, and is open to guests 21+.
