Crying Tiger Chef Partner Thai Dang is sharing the recipe for Garlic Herb Nuoc Cham, a versatile Vietnamese dipping sauce that he serves with one of the bestselling dishes on the menu at his Southeast Asian hotspot in Chicago’s River North, Crispy H. K. Pork Belly. The sauce, which he says you can serve with anything from sautéed vegetables to seafood or steak, or simply toss with rice or use as a dipping sauce for grilled roti and other bread, is a balance of sweet and just the right amount of spicy. It may, quite literally, become your secret sauce!

Garlic Herb Nuoc Cham

A versatile, vibrant Vietnamese dipping sauce

Yield: 4 servings

Ingredients:

2 Tbsp. chopped garlic
2 tsp. thinly sliced Thai chili
¾ cup granulated sugar
½ cup + 2 Tbsp. fish sauce
¾ cup lime juice
¼ cup shallots, small dice
½ cup cilantro, chopped

Method:

1. Combine all ingredients and mix well until sugar is completely dissolved (for best results, use a mortar and pestle).
2. Refrigerate in an airtight container for up to 7 days.
