Vendemmia Cocktail

Tre Dita at The St. Regis Chicago is sharing the recipe for one of its signature Italian spirits-based cocktails, the Vendemmia. One of the lower ABV options on the menu, a dry Lambrusco wine and house-blend “super vermouth” come together for a light, bright, botanical flavor bomb, perfect for sipping when you want to channel some vintage La Dolce Vita vibes. Cin, cin!
Vendemmia Cocktail
Italian spirits meet vintage vibes
Yield: 1 cocktail
Ingredients:
½ oz. Zucca Rabarbaro
¼ oz. Antica Torino Vino Chinato
¼ oz. Carpano Antica Formula Sweet Vermouth
½ oz. Luxardo Apricot Liqueur
3 drops saline from 4:1 solution (see sub-recipe)
3 oz. Lini 910 “Labrusca” Lambrusco Rosso
1 oz. tonic water
lemon twist, for garnish
Method:
FOR SALINE
1. Combine 4 parts water and 1 part salt (i.e. 4 Tbsp. water + 1 Tbsp. salt) and mix well to dissolve salt.
2. Pour into a dropper bottle and label. The saline solution is ready to use immediately.
FOR COCKTAIL
1. In a large coupe or wine glass, over a single extra large ice cube or on the rocks, add all ingredients except tonic together and stir.
2. Top with tonic water.
3. Garnish with a lemon twist on the rim of the glass.
