Tokyo Last Call Is Back for Season III
5 must-try bars from Japan mix it up in Chicago this fall
The one-of-a-kind cocktail pop-up series from the team behind the Chicago Cocktail Classic, in collaboration with House of Suntory, presents Tokyo Last Call: Season III, returning to the Dojo at Sushi-san – Lincoln Park starting Thursday, October 8. In year three, the series’ lineup features exclusively Japanese bars—Bar Nayuta, Cocktail Stand Furek, Bar TRENCH, The Bellwood, and Asia’s 50 Best Bars newcomer Punch Room Tokyo—offering a unique opportunity to experience Japan’s world-renowned cocktail culture without leaving Chicago.
Beverage Director and Partner Kevin Beary and Bar Manager Scott Kitsmiller (Three Dots and a Dash, The Bamboo Room, Gus’ Sip & Dip, Kitty’s Cosmopolitan Club, Chicago Cocktail Classic), along with House of Suntory Brand Ambassador Davey Jones, give us a sneak preview of the third installment of their immersive, speakeasy-style cocktail experience—inspired by Tokyo’s popular “listening bars”—and the bartenders from five globally acclaimed Japanese cocktail bars, set to create curated menus of original specialty cocktails, all of which guests can enjoy alongside select signature bites from Sushi-san.

Meet the Masters
Each Tokyo Last Call guest bartender will present a menu of original cocktails, including ones made with spirits from Suntory’s portfolio, such as Roku Gin, Hibiki Japanese Harmony Blended Whisky, Toki Blended Whisky, Toki Black Blended Whisky, and more. The menu available during each weekend will showcase each bar’s individual style and offerings, all rooted in the traditional techniques and flavors of Japan’s buzzy cocktail scene. 
In addition to standard reservations for Tokyo Last Call: Season III, guests can elevate their experience by booking The Master’s Counter, an intimate seat at the guest bartender’s bar top, for $145 per person, plus tax (gratuity not included). This experience offers a front-row look at the featured bartender’s craft, through a guided, interactive progression through each signature cocktail, paired with select bites from Sushi-san and deeper insight into the inspiration and techniques behind each drink.

Bar Nayuta (Osaka): October 8 – 11
Moving up this year on Asia’s 50 Best Bars’ extended list to No. 70, Bar Nayuta is an intimate speakeasy in Chicago’s sister city of Osaka that despite its small size and semi-secret profile packs a huge personality and outstanding cocktails. Owner and founder Hiro Nakayama, who grew up in Australia, and his team have spent more than a decade delighting drinkers in their below street-level cocktail haven, located behind an infamous half-door that requires patrons to literally duck into it. Expect Hiro’s original creations for Tokyo Last Call to reflect Bar Nayuta’s signature homage to the “golden era of cocktail making,” including classics reimagined using flavorful house-made infusions, bitters and liqueurs.

Cocktail Stand Furek (Kyoto): October 15 – 18
Cocktail Stand Furek, located in one of Japan’s most ancient areas, strips cocktail-making down to one of its most ancient essentials: Water. In a renovated home that could easily be mistaken for a laboratory, Co-Founder and Head Bartender Ryuichi Saito takes a modern approach to flavor, style and sourcing with a focus on a distinct water source fed into the bar (there’s even a waterway running through the bar itself!). Look for his creative use of ice, every Japanese spirit he’ll have available to him, and maybe even some locally sourced teas.

Bar TRENCH (Tokyo): October 22 – 25
Returning for a third consecutive year at Tokyo Last Call is Bar TRENCH, represented by Founder Rogerio Igarashi Vaz. Tucked into a quiet back street of Ebisu in Tokyo’s bustling Shibuya, the 13-seat establishment is known for its music- and art-inspired vibe, and was named one of Asia’s 50 Best Bars for four consecutive years, as well as The World’s 50 Best Bars 51-100 list for five years from 2015. Rogerio is credited with popularizing the use of bitters and traditional Absinthe in Japan’s cocktail scene. Expect his guest appearance at Tokyo Last Call to reflect his ability to effortlessly combine the precise, logical and detail-focused Japanese style of bartending with the more fluid and creative Western style.

The Bellwood (Tokyo): October 29 – November 1
The Bellwood, located in Tokyo’s eclectic Shibuya neighborhood, draws on Japan’s wayō-setchū tradition—the blending of Japanese and Western influences—making it a natural fit for Tokyo Last Call. Guest bartender Cole Nunley will no doubt bring this spirit of cultural exchange, story-telling, and boundary-pushing innovation to his appearance, especially since this Asia’s 50 Best Bar is also known for borrowing from the kaiseki tradition, where courses such as sakizuke (an appetizer to whet the palate), yakimono (a grilled dish showcasing seasonal ingredients), and gohan (rice, traditionally served at the end of the meal), are thoughtfully reimagined as cocktails.

Punch Room Tokyo (Tokyo): November 5 – 8
Punch Room is EDITION’s globally celebrated cocktail bar concept, newly named to Asia’s 50 Best Bars 2026. Inspired by the refined elegance of 19th-century London private clubs and centered around the timeless art of punch-making, reimagined through the lens of Japanese culture, visiting bartender, Punch Room Manager Yas Kawakubo, is sure to wow guests during the final weekend of Tokyo Last Call: Season III with an elegant, showstopping menu of stylized cocktails.

Beary, Kitsmiller and Jones once again selected Tokyo Last Call guest bartenders not only for their unparalleled cocktail talents but because they share the pair’s passion for playlist creation and the inherent knowledge of how the right music can enhance—even transform—a drinking experience. As such, a retro jukebox will spin thoughtfully curated playlists to set the vibe during each weekend.
A select menu of Sushi-san signatures will be available, including Togarashi Chicken Nuggets, Roasted Edamame and Tako Karaage.
The series will take place at Sushi-san – Lincoln Park’s lower-level Dojo weekends beginning Thursday, October 8. Reservations will be available Thursday and Sunday from 5:00 PM – 11:00 PM and Friday – Saturday from 5:00 PM – 12:00 AM throughout the series, with limited availability for walk-ins.
