In Season: Heirloom Tomatoes
One of Our Favorite Things About Summer
As we savor the last months of the summer season, our chefs are adding heirloom tomatoes to their menus. Other than being more colorful and oddly shaped than your everyday tomato, heirloom tomatoes really are special and are at their peak in the late summer.
Aba – Austin is serving the Village Salad with heirloom tomatoes, Kalamata olives, cucumber, red onion, feta cheese and Greek vinaigrette.
Beatrix is celebrating summer produce with the Local Burrata with heirloom tomatoes and strawberries. Beatrix Chef Partner Andrew Ashmore highlights two ingredients that are most fresh during the summer, and loves the unexpected pairing of tomatoes and strawberries.
il Porcellino’s Caprese Salad is made with heirloom tomatoes from Nichols Farm & Orchard, buffalo mozzarella, basil, extra virgin olive oil, salt and pepper. It is simple and the perfect summer side dish.
Joe’s Seafood, Prime Steak & Stone Crab has rolled out an Heirloom Tomato Salad in Chicago with Las Vegas and Washington, D.C. following in September. The salad compliments heirloom tomatoes with pieces of burrata, balsamic vinegar drizzle and a garnish of micro basil, parsley and green onion, all atop a pistachio basil pesto.
Mon Ami Gabi offers a Local Tomato Salad with Corsican feta, cucumber, and red wine vinaigrette. This salad is balanced out by a block of tangy Corsican feta that’s drizzled with olive oil. All tomatoes are from local farmers in each market and vary in color, size, and sweetness.
Pizzeria Portofino is serving the ‘Nduja & Heirloom Tomato Pizza with fresh mozzarella, Tropea onions and basil.

Wildfire’s Summer Tomato Salad is available for a limited time at the Lincolnshire, Glenview and Oak Brook locations. Assorted heirloom tomatoes are paired with goat cheese, fresh basil, Vidalia onions and red wine vinaigrette for a refreshing end of summer salad.
