Corn is now gracing the summer menus at many Lettuce Entertain You restaurants, as chefs use the kernels in their dishes. Happy Camper – Las Vegas gets creative with corn on pizza. The Street Corn Pizza is topped with roasted corn, cotija cheese, cilantro, avocado crema and cream cheese, and served with a mini Tajín bottle. Another corny fave? The Queso Elotes Dip, a satisfying, melty combo of chihuahua cheese, corn, pico de gallo, jalapeños and cream cheese.

The Sweet Corn & Feta Pizza from Pizzeria Portofino is summer on a crust! Layered with roasted garlic, lemon, Controne chili, and creamy feta, it’s the perfect bite for patio season.
