Brand-new tropical food & cocktails are bringing the island vibes

The summer menu has rolled in at Three Dots and a Dash, bringing a half-dozen new tropical cocktails and a totally revamped food menu perfect for sharing. Beverage Director Kevin Beary, Lead Bartender Tyler McClellan and the Three Dots team have not only reimagined a few classics, but also tapped Lettuce Entertain You Culinary Director Max Robbins and Thai Dang, chef partner of the forthcoming Crying Tiger, to create an equally incredible selection of international street food-inspired dishes.

An update on Harry Yee’s Blue Hawaiian, which originated at the Hilton Hawaiian Village in Honolulu, this bright blue, crystal-clear sip gives a modern edge to a tropical classic, swapping Blanco tequila for rum, resulting in an unexpectedly elegant sip.

London Dry Gin, Passionfruit, Lemon, Falernum, Almond Orgeat

Ready for something out-of-this-world? This cocktail was created by J. “Popo” Galsini of Trader Vic’s for a bar competition in 1967, and Three Dots’ version is a lively update on this refreshing combo of London Dry Gin, passionfruit, falernum, and almond orgeat.

You can almost hear the waves crashing on Waikiki Beach as you kick back with this coconut-based concoction in-hand. Inspired by the O.G., created by Don The Beachcomber’s in St. Paul, Minnesota, in the 1970s, the addition of toasted coconut adds a complex, nutty layer of flavor that enhances the natural sweetness of the pineapple and coconut.

Two of the more traditional takes on Three Dots new menu, the Starboard Light is smoky, citrusy, tropical fun, while the Jet Pilot is a bold, boozy mix of both overproof and dark rums, citrus, zesty cinnamon and a dash of absinthe. (Friendly warning: A couple of these may induce spontaneous hula dancing—that little zombie fella may look less menacing than the angler fish, but trust us, he packs a punch…)

This showstopping sampler of several new menu items includes Prime Steak Skewers, Sichuan Popcorn Shrimp, Crispy Pork Belly, Shrimp Spring Rolls, and the pineapple-topped Tropical Guacamole with wonton chips.

A light, refreshing counterpoint to the crispy, fried goodness elsewhere on the menu, the Tropical Tuna Ceviche is packed with fresh avocado, citrusy leche de tigre, and a kick of charred jalapeño ponzu. Sprinkled with toasted coconut for a dash of sweetness, this elevated dish is like the calm after a tropical storm.

Have your booze—and eat it, too! The deliciously over-the-top dessert is a cross between a classic banana split and a bananas foster, featuring creamy coconut sorbet topped with brûléed banana, golden pineapple, salted toffee, and a splash of blazing 151 rum for a fiery finish.
