Tre Dita Will Take You on a Trip to Tuscany

Explore the new 'cucina Toscana' at The St. Regis Chicago

Now open at The St. Regis Chicago, prepare for Tre Dita and Bar Tre Dita to transport you to Tuscany. The restaurant is the first collaboration between award-winning Chef and pasta expert Evan Funke and Lettuce Entertain You Restaurants. Italian for “three fingers,” Tre Dita is a nod to the precise thickness of a properly cut bistecca Fiorentina, which the “cucina Toscana” serves from its open-hearth, wood-fired grill, along with handmade pastas and more.

Located on the second floor of The St. Regis Chicago and open for dinner service seven nights a week, Tre Dita offers sweeping views of the Chicago River and Lake Michigan in Chicago’s Lakeshore East.

So, grab your passport, we’re taking you on a tour of Tre Dita.

Tre Dita’s menu pays homage to various areas of Tuscany, including lesser-traveled towns like Pontremoli, Pienza, and Chiusi. Highlights include Antipasti and Insalati, traditional, handmade Tuscan pastas, entrees made on the woodfire grill, and a selection of steaks. To start, Chef Funke recommends ordering the signature Schiacciata Bianca, a house-made rosemary and sea salt focaccia Toscana, Fiori di Zucca, squash blossoms with ricotta fresca and Parmigiano Reggiano, and Gamberi in Salsa Verde, prawns in a fresh Italian salsa verde.

Primo: The Pasta Lab

Evan Funke Making PastaAt the heart of Tre Dita, which Vetrina Toscana has designated as the first certified Tuscan restaurant in the United States (more info here), is Chef Funke’s renowned temperature – and humidity – controlled “pasta lab.” At any given time, guests can catch a glimpse of chefs hand-making pasta in the lab before heading into the main dining room.

TortelliChef Funke, celebrated as one of the most renowned pasta chefs in the U.S., delved into Italy’s rich culinary heritage with his enthralling TV series, “Shape of Pasta.” Through his adventures, he uncovered historic pasta shapes, and lucky for Chicago, he is bringing some of these award-winning handmade pastas to the Windy City. With more than a half dozen house-made variations, a few to try include Tagliatelle al Ragù, with pecorino grande and finocchietto and Tortelli di Zucca, handmade parcels filled with winter squash dressed with melted butter and sage.

Secondo: The Grill

Wood fire Grill STeakThe centerpiece of the restaurant, an open flame, woodfire grill, features specialties such as Tre Dita’s namesake Bistecca alla Fiorentina steak, Pesce Spada alla Ghiotta, an on-the-bone swordfish, and Pollo alla Toscana, a whole garlic roasted Green Circle chicken.

Terzo: The Wine

Italian wines at Bar Tre DitaTre Dita’s menu is complemented by an exclusively Italian wine list crafted by Wine Director Kat Hawkins as “a love letter to Italy.” Home to more than 700 wines, the list explores regions across Italy with an emphasis on Tuscany, small producers and a curated collection of vintage bottles. Hawkins adopted a storytelling approach in building the list, offering guests the opportunity to try several pours from the same producer as they progress through their meal, get acquainted with Italian grapes not typically found on traditional American wine lists, and end their visit with a choice from the extensive variety of dessert wines, including more than 30 types of Vin Santo and grappa.

E Infine: Bar Tre Dita

Bar Tre Dita at The St. Regis ChicagoAdjacent to Tre Dita is Bar Tre Dita, which serves as one of two bars in The St. Regis Chicago.
