Since opening in 2025, Gus’ Sip & Dip‘s high-quality classic cocktails, fine dipped sandwiches, and immaculate vibes have kept guests coming back again and again. Now, the timeless Chicago tavern has made a splash on the global stage by landing at No. 27 on North America’s 50 Best Bars List by World’s 50 Best, and received the coveted 1 PIN status from The Pinnacle Guide, one of just 46 bars worldwide to achieve PIN status this year.

Gus’ Dirty Martini

Gus' Sip & Dip Dirty Martinis TowerAs described by the New York Times, Gus’ bestselling Dirty Martini “isn’t merely ‘vodka, house olive brine, dry vermouth, blue cheese stuffed olives,” as the menu suggests. Behind the scenes, bartenders make a slurry of blitzed Gordal olives, distilled white vinegar, malic and citric acids, and monosodium glutamate, or MSG, and clarify it into a clear, intensely concentrated olive brine. Stirred with dry vermouth and vodka and gilded with machine-dispensed ice shards, it tastes like a dirty martini in high definition.” We couldn’t agree more—this one’s a must-order! And, priced at $12 each, like every cocktail on the menu at Gus’ Sip & Dip, it’s a delicious steal.

Not Your Average Bar Snacks

Gus' Sip & dip Martini, Amaretto Sour, Wisconsin Cheese Curds, Roasted Turkey Sandwich and Adonis cocktailNot to be outshone, Executive Chef Partner Bob Broskey spun up an award-winning food menu for Gus’ Sip & Dip, earning Food & Beverage Program of the Year in VinePair’s Next Wave Awards. The menu is a continually evolving reimagination of elevated comfort food classics, including bar snacks like Wisconsin Cheese Curds, dipped sandwiches such as Roasted Turkey with aged provolone and gravy jus, and signatures like A Crispy Grilled Cheese served with tomato soup for dipping, prime beef Our Burgers served on Hawaiian buns, and Roasted Chicken Pot Pie.

A Very Special Chocolate Cake

Decadent, layered, and served with a dollop of whipped sweet cream, this cake is a dreamy addition to any night out at Sip & Dip, especially with a White Russian or Irish Coffee on the side.

Pretty in Pink (and Blue)

Gus' Sip & Dip Pinky Gonzales with siete leguas blanco, orange liqueur, almond orgeat, limeGus’ Sip & Dip Partner and Beverage Director Kevin Beary and Bar Manager Scott Kitsmiller are also the creative minds behind the tropical cocktails at Three Dots and a Dash and The Bamboo Room, so it’s only natural that along with a classic Hawaii-Style Mai Tai and Hemingway Daquiri, their spin on Trader Vic’s iconic Pinky Gonzales recently joined the menu. This refreshing combo of Siete Leguas Blanco, orange liqueur, almond orgeat, and lime, garnished with fresh mint, is pretty much made for an impromptu photo shoot in the pink ladies’ room (or the blue room, which deserves equal love!).
