Beverage Director Kevin Beary and his team travel each year to the Caribbean, Central and South America, and more, to discover new producers and variations of rum. While every drink on The Bamboo Room’s menu of carefully crafted cocktails tells a story, the new Rum Flights get back to basics. Each flight delves into the complex flavors and differences in sweetness, bitterness, spiciness, acidity and more, based on each rum’s country of origin. Pours arrive in tasting glasses on a placemat denoting the order in which each tasting is meant to be enjoyed. The Bamboo Room team is available to guide you through each pour, noting what they’re like on the nose, on the tongue, and they how they finish.

Ranging in price from $35 to $75, plus tax (gratuity not included), each flight is a distinctive experience that will meet you wherever you are on your rum journey, whether you’re just starting out (Introduction to Rum), ready to expand your rum repertoire (Fresh Sugarcane Juice), want a taste of the good stuff (Limited Release) or want a recommendation for something new (Bartender Selections).

Beary encourages beginners to start with the Introduction To Rum flight, which features pours that hit on the regions most notable for the spirit: Worthy Park Single Estate Reserve from Jamaica, Neisson Organic from Martinique, Mount Gay Black Barrel from Barbados, and the exclusive Plantation Three Dots and a Dash Single Barrel from Guatemala.

Expand your understanding with the Fresh Sugarcane Juice flight, which highlights a selection of producers that have incorporated the exotic juice into their distilling process. This flight includes a taste of a unique and small batch rum from Renegade Nursery in Grenada, West Indies, and Cañada Rum from Oaxaca, Mexico, which Beary notes in particular offers a light body and easy drinking.

For the more seasoned rum drinker, the Limited Release flight offers a chance to sample rarer offerings aged from 16 to 20 years, including Cadenhead Caroni 20 Year Old from Trinidad, Isautier 16 from St. Pierre, Appleton Hearts Collection 2002 from Jamaica, and Chairman’s Reserve Three Dots And A Dash Single Barrel 19 Year Old, hailing from St. Lucia.
