During the development of the Joe’s Seafood steak program more than 25 years ago, the chef team wanted to create something that was really unique and special to showcase along with the famous Stone Crab. Steakhouses had already been offering bone-in ribeye, but very few offered bone-in filet. Filets tend to be lean, and by keeping the bone next to the filet not only add flavor but a unique beautiful cut. Joe’s signature cut, the Prime 16 oz.
