Spaghetti Limone
Bold flavors, simple ingredients
Yield: 2 servings
Ingredients:
1 lb. bucatini or spaghetti
2 Tbsp. olive oil
2 cloves garlic, crushed
2 large basil leaves
¼ tsp. chili flakes
4 Tbsp. unsalted butter
1 lemon, juiced
1 cup pasta water
2 Tbsp. pecorino, grated
2 Tbsp. Parmesan, grated
1 tsp. parsley, chopped
1 tsp. basil, chopped
Salt to taste
Grated parmesan to garnish
Method:
1. Bring a pot of water to boil and season generously with salt.
2. Add bucatini or spaghetti, stirring every 2-3 minutes. Cook for 10-11 minutes or until al dente.
3. Strain pasta, reserving 1 cup of pasta water for the pasta sauce.
4. In a sauté pan add olive oil, crushed garlic, and basil leaves. Sweat garlic until slightly softened.
5. Add chili flakes, lemon juice, butter, pasta water, and strained pasta.
6. Cook until the sauce is slightly reduced.
7. Add pecorino, Parmesan, chopped parsley, and basil. Mix aggressively until sauce is thick enough to coat the noodle. If the sauce is too thick, a splash of pasta water will lighten the
sauce, and if too thin, add a pinch more cheese and mix well.
8. Salt to taste.
9. Plate in two pasta bowls and garnish with fresh Parmesan.
