WRINKLED GREEN BEANS & CHILI GARLIC VINAIGRETTE

Spicy, garlicky, and irresistible

Ingredients:

INGREDIENTS FOR CHILI GARLIC VINAIGRETTE
3 ⁄4 cup garlic, chopped
1⁄2 cup canola oil
1 Tbsp. Japanese chili oil
1/4 cup white sesame seeds
1 Tbsp. crushed red pepper flakes
1 Tbsp. brown sugar
1⁄4 cup Tamari
1⁄4 cup black vinegar (chef recommends Koon Chun)

INGREDIENTS FOR WRINKLED GREEN BEANS
1 lb. green beans, trimmed
2 Tbsp. neutral oil (chef recommends canola)
½ cup chili garlic vinaigrette
Salt, to taste

Method:

METHOD FOR CHILI GARLIC VINAIGRETTE
1. Add canola oil to a saucepan over medium heat.
2. In a small bowl, combine garlic, chili oil, white sesame seeds and red pepper flakes.
3. Add this mixture to the hot oil in the saucepan, stir immediately and continue to stir, cooking for 1 minute.
4. Remove from heat and allow to cool slightly.
5. While the chili oil mixture is still warm, stir in brown sugar, tamari and vinegar. Stir well to combine.
6. Label, date, and refrigerate for up to 30 days.

METHOD FOR WRINKLED GREEN BEANS
1. Preheat the grill to high heat.
2. In a bowl, toss the green beans with a drizzle of oil and a sprinkle of salt until evenly coated.
3. Place the seasoned green beans in a grill basket and grill over high heat. Toss frequently to prevent burning and promote blistering, until the beans are charred and tender.
4. Once cooked through, transfer the grilled beans to a serving bowl.
5. Drizzle with chili garlic vinaigrette and toss gently until the beans are coated evenly.
6. Serve immediately.
