Olive Oil Freezer Martini

Yield: 4 cocktails
Ingredients:
FOR OLIVE OIL FREEZER MARTINI
4 oz. olive oil infused vodka (see sub-recipe)
marinated olives, for garnish (see sub-recipe)
FOR OLIVE OIL INFUSED VODKA
12 oz. Ketel One Vodka
¼ cup Giachi Dolciolio olive oil (or another high-quality, flavorful olive oil)
1 rosemary sprig
1 thyme sprig
½ cup filtered water
*Note: This recipe prepares 4 servings of olive oil infused vodka. Store the prepared batch in the freezer in a sealed container and it will stay good indefinitely.
FOR MARINATED OLIVES
2-12 oz. jars Carmona Olive Blend
1-6 oz. jar Termite olives
1-6 oz. jar Cerignola olives
1-6 oz. jar Castelvetrano olives
2 ⅔ cup extra virgin olive oil
3 garlic cloves, crushed
1 lemon peel
½ tsp. red pepper flakes
½ tsp. fennel seeds
1 rosemary sprig
2 thyme sprigs
*Note: This recipe prepares 4-6 servings of marinated olives. Refrigerate remaining marinated olives in a sealed container for up to one month.
Method:
FOR OLIVE OIL INFUSED VODKA
1. In a sealed container, combine Ketel One Vodka with olive oil and springs of rosemary and thyme.
2. Whisk thoroughly and let infuse at room temperature for 5 hours, whisking once every hour.
3. Transfer to the freezer overnight for 12 hours.
4. Remove from the freezer and immediately strain through a fine strainer lined with a coffee filter, while still very cold. (Tip: straining in the fridge helps the olive oil solids stay firm for easier removal.)
5. Add ½ cup of water to the vodka.
6. Pour into a glass bottle with a sealed lid and store in the freezer until ready to serve.
FOR MARINATED OLIVES
1. In a small saucepan, gently warm the oil with lemon, herbs, and spices until simmering.
2. Pour the warm oil mixture over the olives in a bowl.
3. Let the olives marinate overnight, allowing the flavors to meld.
4. Store in an airtight container in the refrigerator.
FOR OLIVE OIL MARTINI
1. Remove the marinated olives from the refrigerator 15–20 minutes before serving.
2. Pour the olive oil infused vodka straight from the freezer into a chilled glass of your choice.
3. Garnish with a skewer of marinated olives.
4. Serve with marinated olives on the side, to taste.
